Meal 65 - August 10th - Mexican Salad, Charred Avo and Popcorn Beans

There is obviously quite a variety of meals in the 15 minute meals book. Some have been real 15 minute wonders. Some however have not taken 15 minutes. And some are just not meals. Case in point: this Mexican salad.


I was kind of shocked when I saw it: I don't want to sound like an ignorant bloodthirsty carnivore here, but surely there would be a nice bit of steak under there somewhere? Maybe some fish with a bit of Mexican seasoning on it? But no, it was literally a green salad and some crisps. The type of thing that any old kitchenophobe could knock up in a matter of minutes. Still at least there wouldn't be much washing up involved? Err, no, wrong again. Somehow, the meal requires a frying pan, a griddle pan, a baking tray and a liquidizer, in addition to the usual chopping boards, knives, bowls etc etc.

To be fair it was extremely easy - the nachos go under the grill for a few minutes, the salad ingredients are all chucked in a bowl and the dressing is made simply in the liquidiser. There's not much more to say about it to be honest. I quite liked the griddled avocado with coriander, and the dressing was really nice - the jalapenos give it a really good kick. But let's be honest  at the end of the day it is just a green salad and some crisps - cutting edge cuisine this is not. And 30g of cheese is extremely miserly - I like my nachos covered in gooey, stringy cheddar - I'll worry about the calories later thank you very much.

Lolz gave the dish 7/10. Difficulty rating 1/10. Yes I did manage to burn the nachos slightly.
