Meal 22 - March 5th - Glazed Pork Fillets, Cajun-style Pepper Rice and BBQ Sauce

Going through my worldly possessions at the weekend, Lolz decided a fairly large pile was expendable and hence we took a car load of stuff to one of our favourite weekend hangouts, Smugglers Way tip in Wandsworth (it really is quite an experience).


Amongst the things that survived the cut however (along with my Jamie Oliver books, natch) was a fairly large collection of staple kitchen cupboard ingredients. Added to her already bulging and somewhat limited cupboard space, it became clear that I would need to step up my 15 minute meal schedule in order to make a dent in this excess of sauces, spices and condiments which now populated Lolz's kitchen. And so I chose this meal not because it looked terribly appealing (it didn't to be honest), but because of the BBQ sauce element which requires significant amounts of said cupboard ingredients.

With no food processor and only two pans required I expected this to be straightforward. Once again I pre-cooked standard brown rice as opposed to using the bought pre-cooked stuff. The pork required some minor preparation to speed up cooking time and the veg some rough chopping. Other than that it was mixing up the sauce ingredients in a bowl.

One of the advantages of living with Lolz is that she lives a) more central and b) in close proximity to a supermarket, and so, despite finishing work a little late, I managed to run the 7.5-ish miles to Waitrose, do the shopping, cook dinner and still sit down to watch a rather eventful second half of Manchester United v Real Madrid. If I'm honest, the dish is not one of my favourites. I'm not that keen on pork fillet anyway, and it seems to be like this is supposed to be an easier and speedier substitute for a more slow cooked cut of pork like spare ribs. The sauce was nice and tangy however (even if I did forget the apple juice...) and the rice was good.

Lolz gave the dish 8/10 - thought there was a bit too much going on and that the sauce was a bit too tangy for her. Difficulty rating 2/10.
